Nutritional Yeast Mac & Cheese

Nutritional Yeast is a high quality protein source containing at least 14 minerals, 17 vitamins and all 9 essential amino acids.  If you know a vegan or vegetarian, you can almost rest assure that this is a staple in their diet.   However, you don’t have to be a vegan or vegetarian to enjoy this superfood. While it cannot replace whole foods, Nutritional Yeast is often used as a garnish or ingredient to boost a recipes nutritional value, especially with B-vitamins. 

Naturally Nora Tips:

  • What if I have candida? Nutritional yeast is an ‘inactive yeast’ made from sugarcane and beet molasses.  It is vastly different from brewer’s yeast, baker’s yeast and pathogenic, or disease causing, yeast. It cannot cause or contribute to Candida yeast infections because it is derived from a different species that has been deactivated. 
  • Consumption Options:
    • Are you a vegan? You can still enjoy this recipe, I just recommend replacing the goat’s milk butter with ghee.

Nutritional Yeast Mac & Cheese

Serves: 4 servings
What You Need
  • ½ cup goat's milk butter
  • 1 cup nutritional yeast flakes
  • ½ cup rice flour
  • 3 ½ cups water
  • 1 tsp salt
  • 1 ½ tsp garlic powder
  • ½ tsp turmeric powder
  • 8 cups gluten free pasta alternative of your choice (this recipe is made with Maria’s Kitchen Lentil pasta)
  • Garnish: basil microgreens
What You Do
  1. Cook pasta al dente, rinse, set aside
  2. Make the roux: melt butter on a medium saucepan and slowly start to add flour mixing thoroughly
  3. Add water, Nutritional Yeast, salt, garlic powder, and turmeric to the roux and mix until all ingredients are well combined
  4. Simmer until thickened into a sauce
  5. Turn off stove and stir in pasta
  6. Serve in individual bowls and garnish with basil microgreens
